How do I change that information?

Use your common sense, if you can't work it out - maybe shoutcast isn't for you

Goto winamp - find the thing which is called shoutcast, click on 'input' find the 'yellowpages' button and change it there.

I always find before I try and productively use software, its best to work my way around first

try one of the other tabs then, there is a Yellow Pages button in there somewhere, not hard to find.
